Medium sized potatoes 1 ½ kg boiled
Salt 1 teaspoon
Oil 4-6 tablespoons
Butter or margarine 3 tablespoons


Peel boiled potatoes and cover with plastic sheet and chill for 1 hour. Grate potatoes into long strips. Heat oil and butter in a non stick pan. In potatoes add salt and mix them and pour them in oil and butter. When browned place a plate firmly over the pan to get potato cake. Now take it out on a plate. Slide potato cake back into the pan to cook other side. Fry for 6-8 minutes till brown. Serve at once.
