Smoked Salmon Crisps


All purpose flour 4 ½ tablespoons
Sugar 2 teaspoons
Salt ½ teaspoon
Egg whites 1 large chilled
Unsalted butter 4 tablespoons
Sesame seeds 1 tablespoon
Smoked salmon 4 ounce finely copped
Shallot 1 ½ teaspoons finely chopped
Chives 1 ½ teaspoons finely chopped
Lemon zest ¼ teaspoon finely grated
White pepper ½ teaspoon
Cream ½ cup
Chives finely chopped for garnish


Preheat oven at 400 F. in a bowl add flour, sugar and salt and mix them. Add egg whites and whisk till smooth. Now add butter and whisk again until soft and smooth. In a greased baking dish spoon the batter 3 inches apart and spread 2 inches round. Sprinkle sesame seeds and bake it for about 15 minutes or until it becomes golden and fragrant. Cool it.

In a bowl mix salmon, chives, shallot, lemon zest and white pepper. Now spoon the salmon on the baking tuiles and top with a dollop of cream and garnish with chives.
