400 gram tinned apricots
300 gram natural yogurt
2 egg whites
2 tablespoons soft brown sugar


Pour the apricots into the sieve to drain all the liquid. Chopped the drained apricots into small pieces. Spoon the yogurt into the bowl and add chopped apricots. Mix until mix well. Separate the egg whites and whisk them until they are stiff and no longer move about when you tilt the bowl. Whisk the sugar into the egg whites, one tablespoon at a time. Put the apricot and yogurt mixture into the bowl of beaten egg whites. Mix together gently but thoroughly until the ingredients are combined. Spoon the mixture into the plastic container and freeze until it is solid. Scoop them out and serve.
