Chocolate Pie

Ingredients:
For the Pie Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter (melted)
For the Chocolate Filling:
- 200g dark chocolate (around 70% cocoa)
- 1 ¼ cups heavy cream
- ½ cup whole milk
- ¼ cup sugar
- 3 large eggs
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Pinch of salt
For Topping:
- Whipped cream (optional)
- Chocolate shavings or cocoa powder (optional)
Directions:
Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and granulated sugar. Stir in melted butter until well combined.
- Press the mixture into the bottom and sides of a pie dish to form the crust.
- Bake for 8-10 minutes or until golden brown. Let it cool completely.
Make the Chocolate Filling:
- In a medium saucepan, combine heavy cream, milk, and sugar. Heat over medium heat, stirring occasionally until the mixture begins to simmer (do not let it boil).
- Remove from heat and add dark chocolate. Stir until the chocolate is fully melted and smooth.
- Whisk in the eggs, unsalted butter, vanilla extract, and a pinch of salt until smooth.
Bake the Pie:
- Pour the chocolate filling into the cooled pie crust.
- Bake at 350°F (175°C) for about 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
- Remove from the oven and let the pie cool to room temperature, then refrigerate for at least 2-3 hours to set fully.
Serve:
- Before serving, top the pie with whipped cream and garnish with chocolate shavings or a light dusting of cocoa powder if desired.
