Jam Roll
A light, fluffy sponge cake rolled with a layer of sweet jam, this Jam Roll is a classic dessert that’s perfect for tea time, celebrations, or a delightful treat anytime!

Ingredients:
🔹 For the Sponge Cake:
- 4 large eggs
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
🔹 For the Filling:
- ½ cup fruit jam (strawberry, raspberry, or your favorite)
- 2 tablespoons powdered sugar (for dusting)
Instructions:
1. Prepare the Sponge Cake:
- Preheat the oven to 375°F (190°C). Line a 10x15-inch baking sheet with parchment paper and lightly grease it.
- In a mixing bowl, beat eggs and sugar until pale and fluffy (about 5 minutes). Add vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gently fold this into the egg mixture using a spatula.
- Spread the batter evenly onto the prepared baking sheet and bake for 10-12 minutes, or until the cake springs back when touched.
2. Roll the Cake:
- While the cake is warm, invert it onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper.
- Gently roll the cake with the towel from the short end and let it cool completely (this prevents cracking).
3. Fill & Assemble:
- Carefully unroll the cooled cake and spread an even layer of jam over the surface.
- Roll the cake back up tightly and transfer it to a serving plate.
4. Serve & Enjoy:
- Dust with powdered sugar before serving. Slice and enjoy with tea or coffee! ☕🍰
