Jam Roll

A light, fluffy sponge cake rolled with a layer of sweet jam, this Jam Roll is a classic dessert that’s perfect for tea time, celebrations, or a delightful treat anytime!

Ingredients:

🔹 For the Sponge Cake:

  • 4 large eggs
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

🔹 For the Filling:

  • ½ cup fruit jam (strawberry, raspberry, or your favorite)
  • 2 tablespoons powdered sugar (for dusting)

Instructions:

1. Prepare the Sponge Cake:

  1. Preheat the oven to 375°F (190°C). Line a 10x15-inch baking sheet with parchment paper and lightly grease it.
  2. In a mixing bowl, beat eggs and sugar until pale and fluffy (about 5 minutes). Add vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gently fold this into the egg mixture using a spatula.
  4. Spread the batter evenly onto the prepared baking sheet and bake for 10-12 minutes, or until the cake springs back when touched.

2. Roll the Cake:

  1. While the cake is warm, invert it onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper.
  2. Gently roll the cake with the towel from the short end and let it cool completely (this prevents cracking).

3. Fill & Assemble:

  1. Carefully unroll the cooled cake and spread an even layer of jam over the surface.
  2. Roll the cake back up tightly and transfer it to a serving plate.

4. Serve & Enjoy:

  1. Dust with powdered sugar before serving. Slice and enjoy with tea or coffee! ☕🍰
