Mango Pancake
Soft, fluffy pancakes filled with sweet mango goodness – the perfect tropical twist for breakfast or dessert!

Ingredients:
For the Pancakes:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup milk (or coconut milk for extra flavor)
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon melted butter or oil
- ½ cup ripe mango purée (fresh or canned)
For the Filling & Topping:
- ½ cup diced fresh mango
- ½ cup whipped cream (optional)
- Maple syrup or honey for drizzling
Instructions:
1️⃣ Prepare the Batter:
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix milk, egg, vanilla extract, melted butter, and mango purée until smooth.
- Gradually fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
2️⃣ Cook the Pancakes:
- Heat a non-stick pan over medium heat and lightly grease with butter.
- Pour about ¼ cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown (~1-2 minutes per side).
3️⃣ Assemble & Serve:
- Stack the pancakes, add fresh mango pieces, and top with whipped cream (optional).
- Drizzle with maple syrup or honey and enjoy warm!
