Mango Pancake

Soft, fluffy pancakes filled with sweet mango goodness – the perfect tropical twist for breakfast or dessert!

Ingredients:

For the Pancakes:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup milk (or coconut milk for extra flavor)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or oil
  • ½ cup ripe mango purée (fresh or canned)

For the Filling & Topping:

  • ½ cup diced fresh mango
  • ½ cup whipped cream (optional)
  • Maple syrup or honey for drizzling

Instructions:

1️⃣ Prepare the Batter:

  • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix milk, egg, vanilla extract, melted butter, and mango purée until smooth.
  • Gradually fold the wet ingredients into the dry ingredients until just combined. Do not overmix.

2️⃣ Cook the Pancakes:

  • Heat a non-stick pan over medium heat and lightly grease with butter.
  • Pour about ¼ cup of batter for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown (~1-2 minutes per side).

3️⃣ Assemble & Serve:

  • Stack the pancakes, add fresh mango pieces, and top with whipped cream (optional).
  • Drizzle with maple syrup or honey and enjoy warm!
