Winter Salad with Dressing

A fresh and hearty salad perfect for the colder months, Winter Salad combines crisp greens, roasted vegetables, and a tangy dressing, making it the ideal comfort food for the season.

Ingredients:

For the Salad:
  • 2 cups mixed greens (spinach, arugula, kale, etc.)
  • 1 cup roasted sweet potatoes, cubed
  • 1/2 cup roasted beets, cubed
  • 1/4 cup pomegranate seeds
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup toasted walnuts or pecans
  • 1/2 red onion, thinly sliced
For the Dressing:
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Roast the Vegetables: Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes and beets with olive oil, salt, and pepper, then roast for 25-30 minutes, or until tender.
  2. Make the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
  3. Assemble the Salad: In a large bowl, combine the mixed greens, roasted sweet potatoes, beets, pomegranate seeds, feta, walnuts, and red onion.
  4. Drizzle the dressing over the salad just before serving and toss to combine.
  5. Serve immediately for a fresh and vibrant winter meal.
