Winter Salad with Dressing
A fresh and hearty salad perfect for the colder months, Winter Salad combines crisp greens, roasted vegetables, and a tangy dressing, making it the ideal comfort food for the season.

Ingredients:
For the Salad:
- 2 cups mixed greens (spinach, arugula, kale, etc.)
- 1 cup roasted sweet potatoes, cubed
- 1/2 cup roasted beets, cubed
- 1/4 cup pomegranate seeds
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup toasted walnuts or pecans
- 1/2 red onion, thinly sliced
For the Dressing:
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey or maple syrup
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Instructions:
- Roast the Vegetables: Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes and beets with olive oil, salt, and pepper, then roast for 25-30 minutes, or until tender.
- Make the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
- Assemble the Salad: In a large bowl, combine the mixed greens, roasted sweet potatoes, beets, pomegranate seeds, feta, walnuts, and red onion.
- Drizzle the dressing over the salad just before serving and toss to combine.
- Serve immediately for a fresh and vibrant winter meal.
