Kishmish Palao
A fragrant and mildly sweet Pakistani rice dish, Kishmish Pulao is perfect as a side or main dish. The combination of aromatic spices and plump raisins makes it a delightful addition to any meal.

Ingredients:
- 2 cups basmati rice (soaked for 1 hour)
- 1 cup raisins (kishmish)
- Salt to taste
- 3-4 pieces cinnamon
- 3-4 cardamom pods
- 1 tbsp cumin seeds
- 1 tbsp black peppercorns
- 2 tbsp oil or ghee
- 1 onion, sliced
- 3 cups chicken stock
Instructions:
- Heat oil in a pot and sauté onions until light golden brown.
- Add cardamom, cumin seeds, black pepper, and cinnamon. Stir for a few seconds until fragrant.
- Pour in the chicken stock and bring to a boil.
- Add raisins and soaked rice, stirring gently.
- Cook until most of the stock is absorbed, then cover with a tight lid.
- Reduce the heat to low and let it steam for 10 minutes.
- Fluff with a fork and serve hot with zeera chutney or yogurt.
