Kishmish Palao

A fragrant and mildly sweet Pakistani rice dish, Kishmish Pulao is perfect as a side or main dish. The combination of aromatic spices and plump raisins makes it a delightful addition to any meal.

Ingredients:

  • 2 cups basmati rice (soaked for 1 hour)
  • 1 cup raisins (kishmish)
  • Salt to taste
  • 3-4 pieces cinnamon
  • 3-4 cardamom pods
  • 1 tbsp cumin seeds
  • 1 tbsp black peppercorns
  • 2 tbsp oil or ghee
  • 1 onion, sliced
  • 3 cups chicken stock

Instructions:

  1. Heat oil in a pot and sauté onions until light golden brown.
  2. Add cardamom, cumin seeds, black pepper, and cinnamon. Stir for a few seconds until fragrant.
  3. Pour in the chicken stock and bring to a boil.
  4. Add raisins and soaked rice, stirring gently.
  5. Cook until most of the stock is absorbed, then cover with a tight lid.
  6. Reduce the heat to low and let it steam for 10 minutes.
  7. Fluff with a fork and serve hot with zeera chutney or yogurt.
