Flan

Ingredients:

  • 1 cup sugar (for caramel)
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1/2 cup sugar (for custard mixture)
  • Pinch of salt

Directions:

  1. Prepare the caramel: In a medium saucepan over medium heat, melt 1 cup of sugar until it turns golden brown. Swirl the pan carefully to avoid burning, but don’t stir the sugar. Once melted, quickly pour the caramel into the bottom of a round baking dish (or individual ramekins). Set aside to cool and harden.

  2. Make the custard: In a large bowl, whisk together the sweetened condensed milk, evaporated milk, eggs, 1/2 cup sugar, vanilla extract, and salt until smooth and combined.

  3. Assemble the flan: Pour the custard mixture over the hardened caramel in the baking dish or ramekins.

  4. Bake: Preheat the oven to 350°F (175°C). Place the baking dish or ramekins in a larger pan and add hot water around them, creating a water bath (about halfway up the sides of the dish). Bake for 50-60 minutes, or until the flan is set (a knife inserted should come out clean).

  5. Cool and serve: Allow the flan to cool completely, then refrigerate for at least 2 hours before serving. To serve, run a knife around the edges of the flan and invert it onto a plate to reveal the caramel topping.
