Imli Ki Chutney – Tangy & Sweet Tamarind Sauce

Ingredients (Makes ~1 Cup)
- ½ cup tamarind pulp (imli)
- ½ cup jaggery or brown sugar
- 1 teaspoon roasted cumin powder
- ½ teaspoon black salt
- ½ teaspoon regular salt
- ½ teaspoon red chili powder
- ½ teaspoon ginger powder
- ½ cup water
- 1 teaspoon fennel seeds (optional)
How to Make It
- In a pan, add tamarind pulp, water, and jaggery. Stir well and bring to a boil.
- Add roasted cumin powder, black salt, regular salt, red chili powder, and ginger powder.
- Let it simmer for 8-10 minutes until the chutney thickens.
- Strain the chutney to remove any tamarind fibers.
- Allow it to cool and store in an airtight container in the refrigerator.
