Peri Peri Bites
Ingredients:
- 12 green jalapeños (large)
- 1 cup mozzarella cheese (shredded)
- 1/2 cup cooked chicken (shredded, optional)
- 1 tsp peri peri sauce
- 1/2 tsp red chili flakes
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Salt to taste
- 1/2 cup all-purpose flour
- 1/2 cup water
- 1 cup breadcrumbs
- 1 egg (beaten)
- Oil for frying
Instructions:
- Prepare Jalapeños:
- Slit the jalapeños lengthwise and remove seeds carefully.
- Make the Filling:
- In a bowl, mix mozzarella cheese, cooked chicken (if using), peri peri sauce, red chili flakes, black pepper, garlic powder, and salt.
- Stuff and Coat:
- Stuff the jalapeños with the prepared filling.
- In a small bowl, mix flour and water to form a smooth paste.
- Dip the stuffed jalapeños in the flour paste, then in beaten egg, and coat with breadcrumbs.
- Repeat for a double coating if extra crispiness is desired.
- Fry to Perfection:
- Heat oil in a deep pan and fry the bites until golden brown.
- Remove and place them on a paper towel to drain excess oil.
- Serve & Enjoy:
- Serve hot with a side of peri peri mayo or garlic dip.
