Peri Peri Bites

Ingredients:

  • 12 green jalapeños (large)
  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup cooked chicken (shredded, optional)
  • 1 tsp peri peri sauce
  • 1/2 tsp red chili flakes
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Salt to taste
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 1 cup breadcrumbs
  • 1 egg (beaten)
  • Oil for frying

Instructions:

  1. Prepare Jalapeños:
    • Slit the jalapeños lengthwise and remove seeds carefully.
  2. Make the Filling:
    • In a bowl, mix mozzarella cheese, cooked chicken (if using), peri peri sauce, red chili flakes, black pepper, garlic powder, and salt.
  3. Stuff and Coat:
    • Stuff the jalapeños with the prepared filling.
    • In a small bowl, mix flour and water to form a smooth paste.
    • Dip the stuffed jalapeños in the flour paste, then in beaten egg, and coat with breadcrumbs.
    • Repeat for a double coating if extra crispiness is desired.
  4. Fry to Perfection:
    • Heat oil in a deep pan and fry the bites until golden brown.
    • Remove and place them on a paper towel to drain excess oil.
  5. Serve & Enjoy:
    • Serve hot with a side of peri peri mayo or garlic dip.
