Ingredients
- 4 eggplants (medium-sized)
- ½ cup gram flour (besan)
- ½ teaspoon cumin seeds
- ½ teaspoon coriander powder
- Red chilies (to taste)
- ½ cup yogurt
- 3-4 mint leaves (chopped)
- Salt (to taste)
- Oil (for deep frying)
Directions
1️⃣ Prepare the Eggplant:
- Slice the eggplants into medium-thick rounds.
- Sprinkle salt over the slices and let them rest for 15 minutes.
- Wash the slices to remove excess salt and pat them dry.
2️⃣ Prepare the Batter:
- In a bowl, mix gram flour, cumin seeds, coriander powder, red chilies, and salt.
- Add water gradually to make a smooth batter (not too thick or runny).
3️⃣ Frying the Eggplant:
- Heat oil in a deep frying pan over medium heat.
- Dip each eggplant slice into the gram flour batter, coating it evenly.
- Fry until golden brown and crispy.
- Remove and drain on a paper towel.
4️⃣ Serving Suggestion:
- Serve hot with yogurt and mint dip or chutney.
