Ingredients

  • 4 eggplants (medium-sized)
  • ½ cup gram flour (besan)
  • ½ teaspoon cumin seeds
  • ½ teaspoon coriander powder
  • Red chilies (to taste)
  • ½ cup yogurt
  • 3-4 mint leaves (chopped)
  • Salt (to taste)
  • Oil (for deep frying)

Directions

1️⃣ Prepare the Eggplant:

  • Slice the eggplants into medium-thick rounds.
  • Sprinkle salt over the slices and let them rest for 15 minutes.
  • Wash the slices to remove excess salt and pat them dry.

2️⃣ Prepare the Batter:

  • In a bowl, mix gram flour, cumin seeds, coriander powder, red chilies, and salt.
  • Add water gradually to make a smooth batter (not too thick or runny).

3️⃣ Frying the Eggplant:

  • Heat oil in a deep frying pan over medium heat.
  • Dip each eggplant slice into the gram flour batter, coating it evenly.
  • Fry until golden brown and crispy.
  • Remove and drain on a paper towel.

4️⃣ Serving Suggestion:

  • Serve hot with yogurt and mint dip or chutney.
