Ingredients:
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground paprika
- ½ tsp ground cayenne (optional, for spice)
- 1 can (400g) crushed tomatoes (or 4 fresh tomatoes, chopped)
- Salt and black pepper to taste
- 4 large eggs
- ¼ cup fresh parsley or cilantro, chopped
- ¼ cup crumbled feta cheese (optional)
- Bread or pita for serving
Instructions:
- Sauté Vegetables – Heat olive oil in a pan over medium heat. Add the onion and bell pepper, cooking for about 5 minutes until softened.
- Add Spices and Garlic – Stir in the garlic, cumin, paprika, and cayenne. Cook for 30 seconds until fragrant.
- Cook the Tomato Sauce – Add the crushed tomatoes, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens.
- Poach the Eggs – Make small wells in the sauce and crack the eggs into them. Cover and cook for 5-7 minutes until the egg whites are set but the yolks are still slightly runny.
- Garnish and Serve – Sprinkle with fresh parsley, cilantro, and feta cheese. Serve with warm bread or pita.
