Shakshouka

 Shakshouka is a delicious North African and Middle Eastern dish made with poached eggs in a spiced tomato sauce. It’s perfect for breakfast, brunch, or even dinner!

Ingredients:

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • ½ tsp ground cayenne (optional, for spice)
  • 1 can (400g) crushed tomatoes (or 4 fresh tomatoes, chopped)
  • Salt and black pepper to taste
  • 4 large eggs
  • ¼ cup fresh parsley or cilantro, chopped
  • ¼ cup crumbled feta cheese (optional)
  • Bread or pita for serving

Instructions:

  1. Sauté Vegetables – Heat olive oil in a pan over medium heat. Add the onion and bell pepper, cooking for about 5 minutes until softened.
  2. Add Spices and Garlic – Stir in the garlic, cumin, paprika, and cayenne. Cook for 30 seconds until fragrant.
  3. Cook the Tomato Sauce – Add the crushed tomatoes, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens.
  4. Poach the Eggs – Make small wells in the sauce and crack the eggs into them. Cover and cook for 5-7 minutes until the egg whites are set but the yolks are still slightly runny.
  5. Garnish and Serve – Sprinkle with fresh parsley, cilantro, and feta cheese. Serve with warm bread or pita.
