Fire-Roasted Peanut Herb Chutney

Ingredients:

½ cup roasted peanuts
½ cup fresh coriander leaves (tightly packed)
½ cup fresh mint leaves (tightly packed)
2 garlic cloves (roasted on direct flame)
2–3 green chilies (roasted on direct flame, adjust to taste)
1 tsp cumin seeds
1 tsp coriander seeds
Salt to taste
Water as needed (for blending)

Instructions:

Dry roast the cumin seeds and coriander seeds until aromatic.

Combine all ingredients in a blender: peanuts, coriander leaves, mint leaves, roasted garlic, roasted green chilies, roasted spices, and salt.
Add a little water and blend into a smooth paste.
Taste and adjust salt or spice if needed.
Serve fresh or refrigerate in an airtight container.

Serving Size:

Makes about 1 cup of chutney.
Serving: 2 tablespoons (~30g)
