Green Rice

A fragrant and flavorful dish with a burst of green goodness, Green Rice is packed with spinach, fresh herbs, and aromatic spices, making it a perfect side or main course.

Servings: 4

Ingredients:

  • 1 cup basmati rice
  • 1 cup spinach, chopped
  • 1/2 cup coriander leaves, chopped
  • 1/2 cup mint leaves, chopped
  • 5 tbsp oil
  • 2 tbsp butter
  • 1 tsp cumin seeds
  • 3 cardamom pods
  • 1 bay leaf
  • 2 cloves
  • 1 cinnamon stick
  • 3 green chilies, slit
  • 1 onion, chopped
  • Salt to taste
  • 1/2 tsp garlic paste
  • 2 cups water

Instructions:

  1. In a pot of boiling water, add coriander, mint leaves, salt, and rice. Boil until the rice is cooked and water is absorbed. Set aside.
  2. In a separate pan, heat oil and fry cumin seeds, cloves, cinnamon, cardamom, and bay leaf until fragrant.
  3. Add garlic paste, chopped onion, and green chilies, cooking until the onions turn golden brown.
  4. Stir in the spinach and cook until it forms a thick paste.
  5. Add the cooked rice to the spinach paste, mixing gently. Cover the pot with a lid and cook for 5 minutes.
  6. After 3 minutes, add butter on top and cover the pot again to allow the flavors to meld.
  7. Serve hot with your favorite curry or yogurt.
