Peach Buttermilk Soup

Ripe peaches 3 pounds
Honey 2-3 tablespoons
Lemon juice 2-3 tablespoons
Buttermilk 3 cups
Vanilla extract ½ teaspoon
Cinnamon ½ teaspoon
Nutmeg powder ½ teaspoon
Cardamom powder a pinch
Almonds for garnish


Boil 4 glasses of water and drop peaches into the boiling water for 20 seconds. Take a large bowl of ice water then after 20 seconds transfer the peaches into the ice water. Peel the peaches remove pits and keep aside 3 small peaches aside. Now blend the remaining peaches in the blender with honey, lemon juice and 1 cup of buttermilk. Blend until smooth, transfer this to the bowl and whisk remaining buttermilk, vanilla extract and all the seasonings. Slice and diced the peaches which were kept aside and stir into the soup. Cover and keep it in refrigerator to freeze it. Garnish it with almonds and serve it.
