Pineapple Soufflé

A light, airy, and creamy dessert with a refreshing pineapple flavor, perfect for summer or special occasions!

Ingredients:

  • 1 cup pineapple puree (fresh or canned, blended smooth)
  • ½ cup sugar (adjust to taste)
  • 1 cup heavy whipping cream (chilled)
  • ½ cup condensed milk (for extra richness)
  • 1 tablespoon lemon juice (enhances flavor)
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder
  • ¼ cup cold water
  • ½ cup pineapple chunks (optional, for texture)
  • Few drops of yellow food coloring (optional)

Instructions:

1. Prepare the Gelatin:

  1. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  2. Heat it gently until dissolved (do not boil), then set aside to cool slightly.

2. Make the Pineapple Base:

  1. In a bowl, mix pineapple puree, sugar, lemon juice, and vanilla extract.
  2. Add the melted gelatin to this mixture and stir well.

3. Whip the Cream & Combine:

  1. In a separate bowl, whip the heavy cream until soft peaks form.
  2. Gently fold the whipped cream and condensed milk into the pineapple mixture.

4. Set & Chill:

  1. Pour the soufflé mixture into serving glasses or a large dish.
  2. Refrigerate for 3-4 hours (or until set).

5. Garnish & Serve:

  1. Top with pineapple chunks, whipped cream, and a cherry before serving!
