Orange & Almond Cake With Citrus Mascarpone

Ingredients
For the Cake:
- 1 1/2 cups ground almonds
 - 1 cup self-raising flour
 - 1/2 teaspoon baking powder
 - 1/2 teaspoon salt
 - 1/2 cup unsalted butter, softened
 - 3/4 cup granulated sugar
 - 3 eggs
 - Zest of 2 oranges
 - 1/4 cup fresh orange juice
 - 1/4 teaspoon vanilla extract
 
For the Citrus Mascarpone Frosting:
- 1 cup mascarpone cheese
 - 1/2 cup heavy cream
 - 2 tablespoons powdered sugar
 - Zest of 1 orange
 - 1 tablespoon fresh orange juice
 - 1 teaspoon lemon juice
 
Directions
- Preheat oven to 350°F (175°C). Grease and line a round cake pan.
 - In a bowl, combine ground almonds, flour, baking powder, and salt.
 - In another bowl, cream together butter and sugar until light and fluffy.
 - Add eggs one at a time, beating well after each addition.
 - Stir in orange zest, juice, and vanilla extract.
 - Gradually fold in the dry ingredients until smooth.
 - Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
 - Let the cake cool completely before frosting.
 
For the Frosting:
- Whisk mascarpone, heavy cream, powdered sugar, orange zest, orange juice, and lemon juice together until smooth and fluffy.
 - Spread the frosting over the cooled cake and garnish with additional orange zest or sliced almonds.
