Orange & Almond Cake With Citrus Mascarpone

Ingredients

For the Cake:

  • 1 1/2 cups ground almonds
  • 1 cup self-raising flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3 eggs
  • Zest of 2 oranges
  • 1/4 cup fresh orange juice
  • 1/4 teaspoon vanilla extract

For the Citrus Mascarpone Frosting:

  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • Zest of 1 orange
  • 1 tablespoon fresh orange juice
  • 1 teaspoon lemon juice

Directions

  1. Preheat oven to 350°F (175°C). Grease and line a round cake pan.
  2. In a bowl, combine ground almonds, flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in orange zest, juice, and vanilla extract.
  6. Gradually fold in the dry ingredients until smooth.
  7. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Let the cake cool completely before frosting.

For the Frosting:

  1. Whisk mascarpone, heavy cream, powdered sugar, orange zest, orange juice, and lemon juice together until smooth and fluffy.
  2. Spread the frosting over the cooled cake and garnish with additional orange zest or sliced almonds.
