Gazpacho

This refreshing, chilled Gazpacho is the perfect dish for hot days, offering a burst of flavor with fresh tomatoes, cucumbers, and peppers. Served cold, it’s a light and healthy soup packed with flavor. It’s ideal for a summer meal or appetizer. 


Ingredients:

  • 4 large tomatoes, peeled and chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 2 cups tomato juice
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Directions:

  1. In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, onion, and garlic.
  2. Add the tomato juice, olive oil, red wine vinegar, Worcestershire sauce, salt, and pepper.
  3. Blend until smooth, or pulse to your desired consistency.
  4. Chill the soup in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
  5. Garnish with fresh basil or parsley before serving.
