Gazpacho
This refreshing, chilled Gazpacho is the perfect dish for hot days, offering a burst of flavor with fresh tomatoes, cucumbers, and peppers. Served cold, it’s a light and healthy soup packed with flavor. It’s ideal for a summer meal or appetizer.
Ingredients:
- 4 large tomatoes, peeled and chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1/2 red onion, chopped
- 2 cloves garlic, minced
- 2 cups tomato juice
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Directions:
- In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, onion, and garlic.
- Add the tomato juice, olive oil, red wine vinegar, Worcestershire sauce, salt, and pepper.
- Blend until smooth, or pulse to your desired consistency.
- Chill the soup in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
- Garnish with fresh basil or parsley before serving.
