Pizza ai Quattro Formaggi



Refined flour 250 grams
Salt 5 grams
Yeast 20 grams
Luke warm water
Sugar 1 tablespoon
Oil 2 tablespoons


Onions 1 chopped
Garlic cloves 2 chopped
Olive oil 2 tablespoons
Tomato 1 kg
Tomato puree ½ cup
Fresh oregano chopped 2 teaspoons
Basil fresh 2 teaspoon chopped
Bay leaf 1
Sugar 1 teaspoon
Salt n pepper to taste

Cheese Topping:

Mozzarella cheese 50 grams
Gorgonzola cheese 50 grams
Pecorino cheese 50 grams
Parmesan cheese 50 grams



In a bowl sift flour and salt. Dissolve yeast and sugar in ¼ cup of water and mix it into the flour. Add water to make dough. Knead it thoroughly, replace in the bowl, cover a cloth and allow it raise for an hour. Knead the oil into the dough and keep aside.


Sweat the onion and garlic in olive oil. Add the remainder ingredients and simmer until a smooth consistency is obtained.

In greased pizza dish spread the dough and spread the topping mixture over it. Now equally spread grated mozzarella, gorgonzola, pecorino and parmesan cheeses over the passata. Bake it in preheated oven at 400 F. when crust is golden dish it out.
