Pizza Pugliese


Ingredients:

Dough:

Yeast 10 grams
Refined flour 200 grams
Water
Extra virgin olive oil 2 tablespoons
Sugar ½ teaspoon
Salt a pinch

Topping:

Onions 250 grams sliced
Pecorino cheese 250 grams
Oregano 1 teaspoon
Extra virgin olive oil 4 tablespoons
Ground pepper to taste
Salt to taste

Direction:

Sprinkle yeast and sugar in 2 tablespoons of warm water and leave for 5 minutes. In bowl mix flour, yeast mixture, salt and olive oil. Mix them well then add water and knead to make smooth dough. Knead until it soft and smooth. Now keep the dough in the bowl and cover with a damp cloth. Leave it for 2 hours in a warm place.

Grease the pizza dish and keep the dough on the dish. With hand stretch the dough and flat it so that it covers the dish equally. Brush the olive oil over the dough and cover it with onions, pecorino cheese, oregano and the remaining olive oil.

Bake it in a preheated oven at 350 F until golden and crispy. Season with salt and pepper and then serve.
