Chicken Chow Mien

Ingredients

  • 8 oz (225g) chow mein noodles
  • 1 cup (150g) cooked chicken breast, sliced
  • 2 tbsp (30ml) vegetable oil
  • 1/2 cup (75g) shredded carrots
  • 1/2 cup (75g) bell peppers, thinly sliced
  • 1/2 cup (50g) bean sprouts
  • 1/4 cup (25g) chopped green onions
  • 2 cloves garlic, minced
  • 1 tsp grated ginger

Sauce

  • 3 tbsp (45ml) soy sauce
  • 1 tbsp (15ml) hoisin sauce
  • 1 tsp sesame oil
  • 1/2 tsp black pepper

Instructions

  1. Cook chow mein noodles according to package instructions, then drain and set aside.
  2. Heat 1 tbsp oil in a large pan or wok over medium-high heat. Add chicken and stir-fry for 2 minutes until golden. Remove and set aside.
  3. Add the remaining oil, then sauté garlic and ginger for 30 seconds. Add carrots, bell peppers, and bean sprouts. Stir-fry for 2 minutes.
  4. Add the cooked noodles and chicken back to the pan. Pour in the sauce ingredients and toss everything together.
  5. Stir-fry for another 2 minutes, ensuring the noodles are well coated.
  6. Garnish with green onions and serve hot.
