Chicken Shashlik

Ingredients:

  • 500g boneless chicken breast or thighs (cut into cubes)
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 tomato (sliced)
  • 1 tbsp garlic (minced)
  • 1 tbsp ginger (minced)
  • 1 tbsp lemon juice
  • 2 tbsp yogurt
  • 2 tbsp soy sauce
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • Salt and pepper to taste
  • 2 tbsp oil (for grilling)
  • Wooden skewers (soaked in water for 30 minutes)

Directions:

  1. Prepare the marinade:

    • In a large bowl, combine the garlic, ginger, lemon juice, yogurt, soy sauce, chili powder, paprika, cumin powder, coriander powder, salt, and pepper. Mix well to form a smooth marinade.
  2. Marinate the chicken:

    • Add the chicken cubes to the marinade, making sure each piece is well-coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for a stronger flavor.
  3. Prepare the vegetables:

    • Slice the onion, bell pepper, and tomato into thick chunks. These will be threaded onto the skewers along with the chicken.
  4. Assemble the skewers:

    • Thread the marinated chicken cubes onto the soaked wooden skewers, alternating with pieces of onion, bell pepper, and tomato.
  5. Grill the shashlik:

    • Preheat a grill or a grill pan over medium-high heat. Brush the skewers with a little oil to prevent sticking.
    • Grill the chicken shashlik for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges.
  6. Serve:

    • Serve the Chicken Shashlik with naan, rice, or a side salad, and drizzle with a squeeze of lemon juice.
