Chocolate Mousse

Servings:

  • Makes 4 servings

Ingredients:

  • 200g dark chocolate (around 70% cocoa)
  • 1 cup heavy cream (cold)
  • 2 tbsp sugar (optional, depending on sweetness preference)
  • 1 tsp vanilla extract
  • 2 large eggs (separated into yolks and whites)
  • Pinch of salt

Directions:

  1. Melt the Chocolate:

    • In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave, stirring every 20 seconds until smooth. Let it cool to room temperature.
  2. Whip the Cream:

    • In a separate bowl, whip the heavy cream with sugar (if using) until soft peaks form. Be careful not to overwhip. Set aside.
  3. Whisk Egg Yolks:

    • In another bowl, whisk the egg yolks with vanilla extract until smooth and light in color.
  4. Combine Chocolate and Egg Yolks:

    • Once the chocolate has cooled to room temperature, gently fold it into the egg yolk mixture, stirring until fully combined.
  5. Whisk Egg Whites:

    • In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Be sure to not overbeat.
  6. Fold in the Whipped Cream and Egg Whites:

    • Gently fold the whipped cream into the chocolate mixture, being careful to retain the volume and airiness.
    • Then, fold in the egg whites until smooth and fully combined, but still light and airy.
  7. Chill the Mousse:

    • Spoon the mousse into individual serving bowls or glasses. Refrigerate for at least 2 hours or until set.
  8. Serve:

    • Garnish with whipped cream, chocolate shavings, or fresh berries. Serve chilled.
