Dark Chocolate Mousse

Servings:

  • Makes 4 servings

Ingredients:

  • 200g dark chocolate (70% cocoa or higher)
  • 1 cup heavy cream (cold)
  • 2 tbsp sugar (optional, adjust to taste)
  • 1 tsp vanilla extract
  • 3 large eggs (separated into yolks and whites)
  • Pinch of salt
  • 1 tbsp water (for melting chocolate)
  • Whipped cream and chocolate shavings (for garnish, optional)

Directions:

  1. Melt the Dark Chocolate:

    • In a heatproof bowl, melt the dark chocolate with 1 tablespoon of water using a double boiler or microwave, stirring frequently until smooth and completely melted. Allow it to cool slightly.
  2. Whip the Cream:

    • In a large bowl, whip the heavy cream with sugar (if using) until soft peaks form. Be careful not to overwhip. Set aside.
  3. Prepare the Egg Yolks:

    • In a separate bowl, whisk the egg yolks with vanilla extract until smooth and slightly thickened.
  4. Combine Chocolate and Egg Yolks:

    • Gradually fold the melted chocolate into the egg yolk mixture, stirring gently until fully combined.
  5. Whisk the Egg Whites:

    • In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Take care not to overbeat.
  6. Fold in the Whipped Cream and Egg Whites:

    • Gently fold the whipped cream into the chocolate mixture, maintaining as much airiness as possible.
    • Then, fold in the beaten egg whites until smooth and light, being careful not to deflate the mousse.
  7. Chill the Mousse:

    • Spoon the mousse into individual serving bowls or glasses. Refrigerate for at least 2 hours or until the mousse is set and firm.
  8. Serve:

    • Before serving, garnish with whipped cream, chocolate shavings, or fresh berries for extra indulgence.
