Rösti

Ingredients

  • 4 large potatoes
  • 2 tbsp butter (or more for frying)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs like chives or parsley (optional, for garnish)
  • 1/2 cup grated cheese (optional, such as Swiss cheese, for a cheesy twist)

Instructions:

  1. Prepare the Potatoes:

    • Option 1 (Parboiled): Peel the potatoes and place them in a pot of cold, salted water. Bring the water to a boil and cook the potatoes for 8–10 minutes, until they are just tender but not fully cooked. Drain the potatoes and let them cool. Once cooled, grate them coarsely.
    • Option 2 (Raw): Peel the potatoes and grate them raw using a coarse grater. You can also use a food processor to make the grating process easier. After grating, rinse the grated potatoes under cold water to remove excess starch, then squeeze out the moisture using a clean kitchen towel or cheesecloth.
  2. Cook the Rösti:

    • Heat 1–2 tablespoons of butter in a large skillet (preferably nonstick or cast iron) over medium heat.
    • Add the grated potatoes to the skillet, pressing them down gently to form an even layer. Season with salt and pepper.
    • Cook the rösti for 5–8 minutes on the first side, until golden brown and crispy. Flip the rösti over in sections (or, if you're feeling adventurous, flip the whole thing using a plate for help) and cook the other side for another 5–8 minutes, until crispy and golden.
  3. Finish and Serve:

    • If using cheese, sprinkle the grated cheese over the rösti while it’s still hot, so it melts into the potatoes.
    • Garnish with fresh herbs, such as chopped chives or parsley, for added color and flavor.
  4. Serve:

    • Serve your rösti hot as a breakfast dish, side dish, or a main with eggs, smoked salmon, or your favorite toppings.
