Chicken Tandoori

Ingredients:

  • 1 whole chicken (cut into pieces or kept whole)
  • 1 tsp garlic (minced)
  • 1 tsp ginger (minced)
  • 1 pinch of orange food color or 1 tsp Kashmiri chili powder
  • 1 tsp chili powder
  • ½ tsp salt
  • 3-4 tbsp lemon juice
  • 2 tbsp oil
  • 2 tbsp yogurt

Directions:

  1. Prepare the marinade:

    • In a large mixing bowl, combine the garlic, ginger, orange food color (or Kashmiri chili powder), chili powder, salt, lemon juice, oil, and yogurt. Mix well to form a smooth marinade.
  2. Coat the chicken:

    • Coat the chicken pieces thoroughly with the marinade, making sure all the pieces are evenly covered. For best results, gently make some slashes on the chicken pieces so the marinade seeps in.
  3. Marinate the chicken:

    • Leave the chicken to marinate for at least 3-4 hours, or overnight for deeper flavor. Ensure the chicken is covered and kept in the refrigerator.
  4. Bake the chicken:

    • Preheat the oven to 400°F (200°C). Arrange the marinated chicken pieces on a baking tray or grill pan.
    • Bake the chicken for 30-35 minutes, flipping halfway through the cooking time to ensure even cooking. The chicken should be tender and cooked through, with a slightly charred appearance.
  5. Serve:

    • Serve the Chicken Tandoori with fresh raita, a side salad, and naan bread for a complete meal.
