Tikka Pan Pizza with Olives
A delicious fusion pizza with spicy, marinated chicken tikka, olives, gooey mozzarella cheese, and a soft pan-cooked crust. Perfect for those who love bold flavors!

Total Time: 4.5 hours (including dough rising & marination)
Step 1: Prepare the Dough
Ingredients:
- 2 cups refined flour (250g)
- 1 cup warm milk
- ½ teaspoon salt
- 1 tablespoon sugar
- 1 tablespoon yeast
- 3 tablespoons white butter
Instructions:
- Mix Dry Ingredients: In a bowl, combine refined flour, salt, and butter.
- Activate Yeast: In a small bowl, mix yeast, sugar, and warm milk. Let it sit for 5-10 minutes until foamy.
- Knead the Dough: Gradually add the yeast mixture into the flour, kneading into a soft dough.
- First Rise: Cover the dough and let it rest at room temperature for 3-4 hours, until it doubles in size.
Step 2: Make the Pizza Sauce
Ingredients:
- 2 cloves garlic, chopped
- ¼ teaspoon rosemary
- ¼ teaspoon oregano
- 2 tablespoons oil
- ½ cup tomato purée
- Salt to taste
- 1 teaspoon red chili powder
- 2-4 tablespoons water
Instructions:
- Sauté Garlic: Heat oil in a pan, add chopped garlic, and sauté until golden.
- Add Herbs & Spices: Stir in rosemary, oregano, tomato purée, salt, and red chili powder.
- Simmer: Add water and cook on low heat for 5 minutes until slightly thickened.
Step 3: Prepare the Chicken Tikka
Ingredients:
- 375g boneless chicken (cubed)
- 2 tablespoons oil
- 6 cloves garlic, chopped
- 6 green chilies
- Salt to taste
- 1 teaspoon red chili powder
- ¼ teaspoon black pepper
- 2 tablespoons yogurt
- 2 tablespoons vinegar
Instructions:
- Blend Marinade: In a blender, mix garlic, green chilies, salt, black pepper, red chili powder, yogurt, and vinegar into a paste.
- Marinate Chicken: Coat the chicken pieces with this mixture and let it marinate for at least 2 hours in the refrigerator.
- Cook Chicken: Heat oil in a pan, add marinated chicken, and cook on medium heat until the water evaporates and chicken is tender. Set aside.
Step 4: Assemble & Cook the Pizza
Topping Ingredients:
- 1 ½ cups mozzarella cheese, shredded
- 8-10 black olives, sliced
- 6 green chilies, sliced (optional for extra heat)
Instructions:
- Prepare the Base: Grease a non-stick pan and evenly spread the risen dough inside.
- Layer the Pizza:
- Spread prepared sauce over the dough.
- Sprinkle half of the cheese evenly.
- Add the cooked chicken tikka as the main topping.
- Sprinkle remaining cheese over the top.
- Finally, add black olives and green chilies for extra flavor.
- Cook on Low Flame:
- Cover the pan with a tight lid to trap the steam.
- Cook on the lowest flame for 20-25 minutes, until the crust is cooked and the cheese is melted.
Step 5: Serve & Enjoy!
- Remove from the pan and slice into wedges.
- Serve hot with garlic mayo dip or mint chutney.
