Sheer khurma

A rich and creamy dessert made with vermicelli, milk, dates, and nuts, traditionally prepared for Eid and special occasions!

Total Time: 30-40 minutes


Ingredients:

  • 1 liter (4 cups) full-fat milk
  • ½ cup vermicelli (seviyan), broken
  • 3 tablespoons ghee
  • ¼ cup chopped dates (khajoor)
  • ¼ cup sugar (adjust to taste)
  • 2-3 tablespoons condensed milk (optional, for extra richness)
  • ¼ teaspoon cardamom powder
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped pistachios
  • 2 tablespoons chopped cashews
  • 1 tablespoon raisins
  • A few saffron strands (optional)
  • ½ teaspoon rose water (optional)

Instructions:

1. Roast the Vermicelli & Nuts:

  1. In a pan, heat ghee and roast the chopped nuts until golden brown. Remove and set aside.
  2. In the same pan, add vermicelli and roast on low-medium heat until golden. Set aside.

2. Cook the Sheer Khurma:

  1. In a heavy-bottomed pot, bring milk to a boil, stirring occasionally.
  2. Add roasted vermicelli and cook for 10-12 minutes until it softens.
  3. Stir in sugar, chopped dates, and cardamom powder. Mix well.
  4. Add the roasted nuts, raisins, and saffron. Cook for 5-7 minutes until thickened.

3. Final Touch & Serve:

  1. Stir in rose water and condensed milk (if using) for extra flavor.
  2. Remove from heat and serve warm or chilled, garnished with extra nuts!
