Sheer khurma
A rich and creamy dessert made with vermicelli, milk, dates, and nuts, traditionally prepared for Eid and special occasions!

Total Time: 30-40 minutes
Ingredients:
- 1 liter (4 cups) full-fat milk
- ½ cup vermicelli (seviyan), broken
- 3 tablespoons ghee
- ¼ cup chopped dates (khajoor)
- ¼ cup sugar (adjust to taste)
- 2-3 tablespoons condensed milk (optional, for extra richness)
- ¼ teaspoon cardamom powder
- 2 tablespoons chopped almonds
- 2 tablespoons chopped pistachios
- 2 tablespoons chopped cashews
- 1 tablespoon raisins
- A few saffron strands (optional)
- ½ teaspoon rose water (optional)
Instructions:
1. Roast the Vermicelli & Nuts:
- In a pan, heat ghee and roast the chopped nuts until golden brown. Remove and set aside.
- In the same pan, add vermicelli and roast on low-medium heat until golden. Set aside.
2. Cook the Sheer Khurma:
- In a heavy-bottomed pot, bring milk to a boil, stirring occasionally.
- Add roasted vermicelli and cook for 10-12 minutes until it softens.
- Stir in sugar, chopped dates, and cardamom powder. Mix well.
- Add the roasted nuts, raisins, and saffron. Cook for 5-7 minutes until thickened.
3. Final Touch & Serve:
- Stir in rose water and condensed milk (if using) for extra flavor.
- Remove from heat and serve warm or chilled, garnished with extra nuts!
