Ingredients

  • Chicken (bone-in or boneless, as preferred): 1 kg
  • Yogurt: 1/2 cup
  • Lemon juice: 3 tablespoons
  • Garlic paste: 1 tablespoon
  • Ginger paste: 1 tablespoon
  • Red chili powder: 1 tablespoon
  • Black pepper: 1 teaspoon
  • Cumin powder: 1 teaspoon
  • Coriander powder: 1 teaspoon
  • Turmeric powder: 1/2 teaspoon
  • Garam masala: 1 teaspoon
  • Salt: to taste
  • Oil or melted butter: 3 tablespoons

Directions

  1. In a bowl, mix yogurt, lemon juice, garlic paste, ginger paste, red chili powder, black pepper, cumin, coriander, turmeric, garam masala, salt, and oil to form a thick marinade.
  2. Coat the chicken evenly with the marinade and let it rest for at least 2 hours (overnight for deeper flavor).
  3. Preheat the grill to medium-high heat and lightly grease the grates.
  4. Place the marinated chicken on the grill and cook for 8-10 minutes per side, basting with oil or butter occasionally for extra juiciness.
  5. Check for doneness by ensuring the internal temperature reaches 165°F (75°C) for boneless and 175°F (80°C) for bone-in chicken.
  6. Remove from heat and let it rest for 5 minutes before serving.
  7. Serve hot with grilled vegetables, naan, or a fresh salad.
