Khoya Lassi

Ingredients (Serves 2)

  • Yogurt (curd): 2 cups
  • Khoya (mawa): 4 tbsp (crumbled)
  • Sugar: 2-3 tbsp (adjust to taste)
  • Milk: 1/2 cup (optional, for consistency)
  • Cardamom powder: 1/4 tsp
  • Saffron strands: 5-6 strands (optional, soaked in 1 tbsp warm milk)
  • Chopped nuts: 1 tbsp (almonds, pistachios for garnish)
  • Ice cubes: 4-6

Instructions

  1. Prepare the mixture:
    In a blender, add yogurt, crumbled khoya, sugar, and cardamom powder. Blend until smooth.

  2. Adjust consistency:
    If the lassi is too thick, add milk gradually to achieve your desired consistency. Blend again.

  3. Add saffron (optional):
    If using saffron, mix the soaked saffron milk into the lassi for added flavor and color.

  4. Serve chilled:
    Pour the lassi into glasses, add ice cubes, and garnish with chopped nuts.

  5. Optional topping:
    Sprinkle a little more crumbled khoya or saffron strands on top before serving.
