Bhuna Gosht

A rich and flavorful slow-cooked meat dish, Bhuna Hua Gosht is a traditional favorite with deep, aromatic spices and a thick, well-browned gravy. Perfect for pairing with naan or rice!

Ingredients:

  • 1 kg mutton or beef
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 2 big black cardamoms
  • 6 black peppercorns
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon coriander powder
  • ½ teaspoon cumin seeds
  • ½ cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 5 tablespoons cooking oil
  • 4 green chilies, chopped
  • Fresh coriander leaves for garnish

Instructions:

  1. Sauté the Onions & Meat:

    • Heat oil in a heavy-based pot.
    • Add chopped onions and fry until golden brown.
    • Add the meat and cook for about 5 minutes, stirring occasionally.
  2. Cook with Spices:

    • Mix in all the spices, ginger-garlic paste, yogurt, and tomatoes.
    • Stir well and cook until the tomatoes soften and the water from them evaporates.
  3. Tenderize the Meat:

    • Add 2 cups of water, cover, and let it cook on low heat until the meat is tender.
    • Increase the heat to evaporate any remaining water, stirring continuously to achieve a well-browned, thick consistency.
  4. Garnish & Serve:

    • Garnish with chopped green chilies and fresh coriander leaves.
    • Serve hot with naan, roti, or steamed rice.
