Spicy Schezwan Fish
Ingredients:
- 500g fish fillets (preferably white fish like tilapia or basa)
- 2 tbsp cornflour
- 1 tbsp all-purpose flour (optional)
- 1 tsp ginger-garlic paste
- 1-2 tbsp Schezwan sauce (adjust to taste)
- 1 tbsp soy sauce
- 1 tsp chili powder (adjust to heat preference)
- 1/2 tsp black pepper powder
- Salt to taste
- 1 egg (optional, helps in coating)
- Oil for frying
For Schezwan Sauce:
- 2 tbsp Schezwan peppercorns
- 4-5 dried red chilies (soaked in warm water)
- 2 tbsp garlic (finely chopped)
- 1 tbsp ginger (finely chopped)
- 1/4 cup tomato ketchup
- 1 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp sugar
- 1 tbsp oil
Instructions:
For the Fish:
- Prepare the Fish: Clean and cut the fish fillets into bite-sized pieces. Pat them dry with a paper towel.
- Marinate: In a bowl, mix cornflour, all-purpose flour (if using), ginger-garlic paste, soy sauce, chili powder, black pepper, and a pinch of salt. Add the fish pieces and coat them evenly. Let it sit for about 15-20 minutes.
- Fry: Heat oil in a pan and shallow fry the marinated fish pieces until golden brown and crispy. Remove and set aside on paper towels to drain excess oil.
For the Schezwan Sauce:
- Grind the Chilies: In a blender, grind the soaked red chilies and Schezwan peppercorns into a smooth paste.
- Cook the Sauce: Heat oil in a pan. Add the chopped garlic and ginger, and sauté until fragrant. Add the chili paste and cook for 2-3 minutes.
- Add Sauces: Add soy sauce, ketchup, vinegar, and sugar. Cook the mixture for another 2-3 minutes until it thickens and becomes aromatic.
- Mix the Fish: Add the fried fish pieces to the Schezwan sauce and toss them well to coat the fish evenly with the sauce. Cook for 2-3 minutes, allowing the fish to absorb the flavors.
Garnish and Serve:
- Garnish with chopped spring onions or cilantro.
- Serve hot with steamed rice or noodles.
