Falafel

Ingredients (Makes ~20 Falafel):

  • 1 cup dried chickpeas (do not use canned; soak overnight)
  • 1 small onion, roughly chopped
  • 3 garlic cloves
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon baking soda
  • Salt to taste
  • Pepper to taste
  • 2-3 tablespoons all-purpose flour (or chickpea flour)
  • Vegetable oil for frying

Instructions:

  1. Prepare the Chickpeas:

    • Soak the dried chickpeas overnight in plenty of water. They will double in size. Drain and rinse them before use.
  2. Blend the Ingredients:

    • In a food processor, add the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, paprika, salt, and pepper.
    • Blend until the mixture resembles coarse sand (do not over-process).
  3. Form the Mixture:

    • Transfer the mixture to a bowl. Add baking soda and flour, mixing until the mixture holds together. Cover and refrigerate for 1-2 hours.
  4. Shape the Falafel:

    • Scoop small portions of the mixture (about 1-2 tablespoons) and shape into balls or patties.
  5. Fry the Falafel:

    • Heat oil in a deep pan to 350°F (175°C). Fry falafel in batches for about 3-4 minutes until golden brown and crispy. Drain on paper towels.
  6. Serve:

    • Serve warm with pita bread, tahini sauce, hummus, or a fresh salad.
