Pavlova

Ingredients

For the Meringue:

  • Egg whites: 4 large, room temperature
  • Caster sugar (superfine sugar): 1 cup (200g)
  • Cornstarch: 2 teaspoons
  • White vinegar: 1 teaspoon
  • Vanilla extract: 1 teaspoon

For the Topping:

  • Heavy cream: 1 cup (240ml), chilled
  • Powdered sugar: 2 tablespoons
  • Vanilla extract: 1 teaspoon
  • Fresh fruits: Strawberries, kiwis, raspberries, blueberries, or passionfruit pulp

Directions

  1. Preheat the Oven:

    • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper. Draw a 7-inch (18 cm) circle on the parchment and flip it over.
  2. Make the Meringue:

    • In a clean, dry bowl, beat the egg whites on medium speed using an electric mixer until soft peaks form.
    • Gradually add the sugar, one tablespoon at a time, beating well after each addition. Continue until the mixture is glossy and stiff peaks form. This may take 7–10 minutes.
    • Sift the cornstarch over the meringue, then gently fold it in along with the vinegar and vanilla extract.
  3. Shape the Meringue:

    • Spoon the meringue onto the prepared baking sheet within the circle. Use a spatula to shape it into a dome, creating a slight indentation in the center for the toppings.
  4. Bake the Pavlova:

    • Reduce the oven temperature to 250°F (120°C) and bake for 1 hour.
    • Turn off the oven and let the pavlova cool completely inside the oven with the door slightly ajar. This prevents cracking.
  5. Prepare the Topping:

    • Whip the chilled cream, powdered sugar, and vanilla extract until soft peaks form.
  6. Assemble the Pavlova:

    • Transfer the cooled meringue to a serving plate. Top with whipped cream and an assortment of fresh fruits.
