Polow

Ingredients:

  • 2 cups basmati rice
  • 3 cups water
  • 2 tbsp ghee or butter
  • 1 medium onion, thinly sliced
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup slivered almonds or pistachios (optional)
  • 1/2 tsp saffron threads (soaked in 2 tbsp warm water)
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 tbsp sugar (optional, for sweetness)
  • Salt to taste
  • 1 tbsp olive oil (for cooking)
  • Fresh herbs (parsley or dill), pomegranate for garnish (optional)

Instructions:

  1. Rinse Rice: Wash the basmati rice in cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.

  2. Cook Rice: In a large pot, bring 3 cups of water to a boil. Add the soaked and drained rice along with a pinch of salt. Cook for about 5-7 minutes, until the rice is partially cooked (al dente). Drain and set aside.

  3. Prepare the Aromatics: In a separate pan, heat 1 tbsp olive oil and sauté the onions until golden brown. Add the cinnamon, cumin, and sugar (if using), and stir for 1–2 minutes to release the spices' aroma.

  4. Mix Rice and Spices: In a large pot, melt the ghee or butter over medium heat. Add a layer of cooked rice, then sprinkle a portion of the sautéed onions, raisins, nuts, and saffron water. Repeat until all ingredients are layered.

  5. Steam the Rice: Cover the pot tightly and cook over low heat for 30–40 minutes, allowing the rice to steam and absorb the flavors. You can also wrap a kitchen towel around the lid to trap the steam.

  6. Garnish and Serve: Once the rice is fully cooked, fluff it with a fork and garnish with fresh herbs if desired. Serve hot.
