Hot Wings
Ingredients
For the Wings:
- 2 lbs chicken wings (about 10–12 wings)
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1/2 tsp garlic powder (optional)
- 1/2 tsp onion powder (optional)
For the Hot Sauce:
- 1/2 cup hot sauce (Frank's RedHot or your favorite brand)
- 1/4 cup unsalted butter
- 1 tbsp white vinegar or apple cider vinegar
- 1/2 tsp smoked paprika (optional, for extra smokiness)
- 1/4 tsp cayenne pepper (optional, for extra heat)
- 1/4 tsp garlic powder
- Salt to taste
For Serving:
- Celery sticks
- Ranch or blue cheese dressing (for dipping)
Instructions:
Prepare the Wings:
- Preheat your oven to 425°F (220°C) if baking or prepare your grill if grilling.
- Pat the chicken wings dry with paper towels to ensure crispiness. Toss the wings with olive oil, salt, pepper, and optional garlic and onion powder.
Cook the Wings:
- Baking: Place the wings on a baking sheet lined with parchment paper or foil. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
- Frying: Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Fry the wings for 8–10 minutes until they’re golden brown and crispy. Remove and drain on paper towels.
- Grilling: Preheat your grill to medium-high heat and grill the wings for 10–12 minutes, turning occasionally, until crispy and cooked through.
Make the Hot Sauce:
- While the wings are cooking, melt the butter in a small saucepan over medium heat. Add the hot sauce, vinegar, smoked paprika, cayenne, garlic powder, and salt. Stir and cook for 2–3 minutes, allowing the sauce to come together.
Coat the Wings: Once the wings are cooked, transfer them to a large bowl. Pour the hot sauce over the wings and toss them to coat thoroughly.
Serve: Serve the hot wings with celery sticks and your choice of ranch or blue cheese dressing on the side for dipping.
