Malai Kofta

A rich and flavorful dish made with deep-fried paneer koftas served in a creamy tomato-based gravy.

Ingredients

For the Kofta:

  • 250g Cottage cheese (Paneer), crumbled
  • 2 tbsp Plain flour
  • ½ tsp Baking powder
  • 2 Green chilies, chopped
  • ½ tsp Coriander powder
  • Salt to taste
  • Oil for deep frying

For the Gravy:

  • 4 large Tomatoes, chopped
  • 1 large Onion, chopped
  • 5 Garlic cloves
  • 1-inch Ginger, peeled
  • 1 Green chili, chopped
  • 2 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • ¼ tsp Red chili powder
  • 2 tbsp Grated coconut
  • 1 cup Green peas, boiled
  • Salt to taste
  • 100g Fresh cream
  • 1 cup Heavy cream
  • 4 cups Water
  • 2 tbsp Oil
  • Green coriander leaves for garnish

Instructions

Step 1: Prepare the Kofta

  1. In a bowl, crumble the paneer and knead it well.
  2. Add plain flour, baking powder, chopped green chilies, coriander powder, and salt. Knead again to mix everything properly.
  3. Shape the mixture into small balls.
  4. Heat oil in a deep pan and fry the koftas until golden brown. Remove and set aside on paper towels to absorb excess oil.

Step 2: Prepare the Tomato Puree

  1. In a pot, combine chopped tomatoes and 4 cups of water.
  2. Cook until tomatoes turn soft.
  3. Blend to make a smooth paste and set aside.

Step 3: Prepare the Masala Paste

  1. Blend onion, garlic, ginger, coriander seeds, cumin seeds, and red chili powder with some water into a smooth paste.

Step 4: Cook the Gravy

  1. Heat 2 tbsp oil in a pot and fry the blended masala paste until the water evaporates and the oil separates.
  2. Add boiled green peas and chopped green chili. Sauté for 1-2 minutes.
  3. Stir in the tomato puree and cook until the gravy thickens.
  4. Add fresh cream and cook for another 10-15 minutes on low heat.

Step 5: Assemble & Serve

  1. Gently add the fried koftas into the prepared gravy.
  2. Stir in heavy cream for extra richness.
  3. Garnish with fresh coriander leaves.
  4. Serve hot with naan, roti, or steamed rice.
