Malai Kofta
A rich and flavorful dish made with deep-fried paneer koftas served in a creamy tomato-based gravy.

Ingredients
For the Kofta:
- 250g Cottage cheese (Paneer), crumbled
- 2 tbsp Plain flour
- ½ tsp Baking powder
- 2 Green chilies, chopped
- ½ tsp Coriander powder
- Salt to taste
- Oil for deep frying
For the Gravy:
- 4 large Tomatoes, chopped
- 1 large Onion, chopped
- 5 Garlic cloves
- 1-inch Ginger, peeled
- 1 Green chili, chopped
- 2 tsp Coriander seeds
- 1 tsp Cumin seeds
- ¼ tsp Red chili powder
- 2 tbsp Grated coconut
- 1 cup Green peas, boiled
- Salt to taste
- 100g Fresh cream
- 1 cup Heavy cream
- 4 cups Water
- 2 tbsp Oil
- Green coriander leaves for garnish
Instructions
Step 1: Prepare the Kofta
- In a bowl, crumble the paneer and knead it well.
- Add plain flour, baking powder, chopped green chilies, coriander powder, and salt. Knead again to mix everything properly.
- Shape the mixture into small balls.
- Heat oil in a deep pan and fry the koftas until golden brown. Remove and set aside on paper towels to absorb excess oil.
Step 2: Prepare the Tomato Puree
- In a pot, combine chopped tomatoes and 4 cups of water.
- Cook until tomatoes turn soft.
- Blend to make a smooth paste and set aside.
Step 3: Prepare the Masala Paste
- Blend onion, garlic, ginger, coriander seeds, cumin seeds, and red chili powder with some water into a smooth paste.
Step 4: Cook the Gravy
- Heat 2 tbsp oil in a pot and fry the blended masala paste until the water evaporates and the oil separates.
- Add boiled green peas and chopped green chili. Sauté for 1-2 minutes.
- Stir in the tomato puree and cook until the gravy thickens.
- Add fresh cream and cook for another 10-15 minutes on low heat.
Step 5: Assemble & Serve
- Gently add the fried koftas into the prepared gravy.
- Stir in heavy cream for extra richness.
- Garnish with fresh coriander leaves.
- Serve hot with naan, roti, or steamed rice.
