Mexican Pizza

Ingredients:

Crusty Pizza Dough:

Water 1 cup
Unsweetened applesauce 1 tablespoon
Salt ½ teaspoon
All purpose flour 1 ½ cup
Whole wheat flour 1 ½ cup
Yeast 1 ½ teaspoon (add it in ¼ cup of warm water)

Topping:


Refried beans 16 oz
Fajita seasonings 2 teaspoon
Cheddar cheese 6 slices
Chunky salsa 2 cup
Scallions with tops 2 sliced
Lettuce 1 cup chopped
Jalapeno pepper 1 chopped
Non fat sour cream 1 cup

Direction:

Crusty Pizza Dough:

Mix all purpose flour, whole wheat flour salt, yeast and apple sauce. Now knead it with water to make smooth and elastic dough. Roll dough into a circle. Grease the pan, place the dough on the pan, and let it rise for 30 minutes before baking, for the thin crust, bake right away. Bake in a preheated 500 F oven for 3 minutes. Remove it from the oven.

Topping:

After removing from the oven the topping is spread in an order of, cheese, refried beans, and fajita seasonings. Return to oven and bake the pizza for 7 minutes.  Remove from the oven. Place lettuce, salsa, jalapeno, scallions and sour cream in bowls for everyone to choose it own topping.
