Mexican Pizza

Ingredients

  • For the Pizza Base:

    • 4 flour tortillas (8-inch size)
    • 2 tbsp olive oil (or vegetable oil)
  • For the Toppings:

    • 1 lb ground beef (or chicken, if preferred)
    • 1 small onion, finely chopped
    • 1 packet taco seasoning (or homemade seasoning with chili powder, cumin, garlic powder, onion powder, salt, and pepper)
    • 1/2 cup refried beans (or black beans, mashed)
    • 1 cup shredded cheddar cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup diced tomatoes
    • 1/2 cup sliced black olives (optional)
    • 1/4 cup chopped green onions
    • 1/4 cup fresh cilantro, chopped (optional)
    • 1 jalapeño, sliced (optional for heat)
    • 1/2 cup sour cream (for drizzling)
    • Salsa (for serving)

Instructions:

  1. Prepare the Tortillas:

    • Preheat your oven to 375°F (190°C).
    • Brush both sides of each tortilla with olive oil. This will help them crisp up nicely.
    • Place the tortillas on a baking sheet and bake for about 8-10 minutes, flipping halfway through, until they become golden and crispy. Remove from the oven and set aside.

    • Top with a layer of the seasoned ground beef mixture.
    • Sprinkle a generous amount of shredded cheddar and mozzarella cheese on top.
    • Add your diced tomatoes, black olives, and jalapeño slices (if using).
  4. Bake the Pizza:

    • Place the assembled pizza into the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.
    • Remove from the oven and place a second crispy tortilla on top to form a "pizza sandwich" or stack.
    • Optional: You can also add another layer of beans, beef, and cheese if you prefer a double-decker pizza.
  5. Garnish and Serve:

    • Once the pizza is out of the oven, top with fresh chopped green onions, cilantro, and a drizzle of sour cream.
    • Serve with salsa on the side for dipping.
