Smoked Salmon Crisps

Ingredients


For the Crisps:

  • All-purpose flour: 4 ½ tablespoons
  • Sugar: 2 teaspoons
  • Salt: ½ teaspoon
  • Egg whites: 1 large, chilled
  • Unsalted butter: 4 tablespoons, melted
  • Sesame seeds: 1 tablespoon

For the Topping:

  • Smoked salmon: 4 ounces, finely chopped
  • Shallot: 1 ½ teaspoons, finely chopped
  • Chives: 1 ½ teaspoons, finely chopped
  • Lemon zest: ¼ teaspoon, finely grated
  • White pepper: ½ teaspoon
  • Heavy cream: ½ cup, whipped
  • Chives: finely chopped, for garnish

Directions

  1. Prepare the Crisps:

    • Preheat the oven to 400°F (200°C).
    • In a mixing bowl, combine the flour, sugar, and salt.
    • Add the chilled egg whites and whisk until smooth. Gradually add the melted butter, whisking until the mixture is soft and smooth.
    • Spoon the batter onto a greased or parchment-lined baking sheet, spacing each dollop about 3 inches apart. Spread each portion into a 2-inch round.
    • Sprinkle the rounds with sesame seeds. Bake for approximately 15 minutes, or until the crisps are golden and fragrant.
    • Remove from the oven and allow the crisps to cool completely on a wire rack.
  2. Prepare the Topping:

    • In a bowl, combine the smoked salmon, shallot, chives, lemon zest, and white pepper. Mix until well blended.
  3. Assemble:

    • Spoon the salmon mixture onto the cooled crisps.
    • Top each with a dollop of whipped cream and garnish with chopped chives.
