Cherry Almond Cookies
Ingredients:
- 1 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- ¾ teaspoon almond extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 ½ cups crushed coconut
- ¾ cup chopped almonds
- 16 ounces cherries, drained and halved
Directions:
- Prepare Dough: In a large mixing bowl, cream together butter, sugar, and brown sugar until light and fluffy.
- Add Wet Ingredients: Beat in eggs one at a time, then mix in almond extract.
- Combine Dry Ingredients: In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, beating well.
- Add Texture: Stir in crushed coconut and chopped almonds using a spoon.
- Shape & Bake: Drop rounded tablespoons (about 2-inch cookies) onto a greased baking sheet. Press a halved cherry in the center of each.
- Bake: Preheat oven to 350°F (175°C). Bake cookies for 12-15 minutes, or until golden brown.
- Cool & Serve: Allow cookies to cool on a wire rack before serving.
