Cherry Almond Cookies

Ingredients:

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • ¾ teaspoon almond extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 ½ cups crushed coconut
  • ¾ cup chopped almonds
  • 16 ounces cherries, drained and halved

Directions:

  1. Prepare Dough: In a large mixing bowl, cream together butter, sugar, and brown sugar until light and fluffy.
  2. Add Wet Ingredients: Beat in eggs one at a time, then mix in almond extract.
  3. Combine Dry Ingredients: In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, beating well.
  4. Add Texture: Stir in crushed coconut and chopped almonds using a spoon.
  5. Shape & Bake: Drop rounded tablespoons (about 2-inch cookies) onto a greased baking sheet. Press a halved cherry in the center of each.
  6. Bake: Preheat oven to 350°F (175°C). Bake cookies for 12-15 minutes, or until golden brown.
  7. Cool & Serve: Allow cookies to cool on a wire rack before serving.
