Chinese Chicken Cabbage Salad

Ingredients

  • 2 cups (140g) shredded green cabbage
  • 1 cup (70g) shredded red cabbage
  • 1 cup (150g) cooked chicken breast, shredded
  • 1/2 cup (50g) shredded carrots
  • 1/4 cup (30g) sliced almonds, toasted
  • 2 green onions, chopped
  • 1 tbsp sesame seeds
  • 1/4 cup (40g) crispy chow mein noodles (optional)

Dressing

  • 2 tbsp (30ml) rice vinegar
  • 1 tbsp (15ml) soy sauce
  • 1 tbsp (15ml) sesame oil
  • 1 tbsp (20g) honey (or brown sugar)
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1/2 tsp sriracha (optional for spice)

Instructions

  1. In a large bowl, combine green cabbage, red cabbage, chicken, carrots, almonds, green onions, sesame seeds, and chow mein noodles.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and sriracha.
  3. Pour the dressing over the salad and toss well to coat.
  4. Serve immediately or let it chill for 10-15 minutes for flavors to blend.
