Chinese Chicken Cabbage Salad
Ingredients
- 2 cups (140g) shredded green cabbage
- 1 cup (70g) shredded red cabbage
- 1 cup (150g) cooked chicken breast, shredded
- 1/2 cup (50g) shredded carrots
- 1/4 cup (30g) sliced almonds, toasted
- 2 green onions, chopped
- 1 tbsp sesame seeds
- 1/4 cup (40g) crispy chow mein noodles (optional)
Dressing
- 2 tbsp (30ml) rice vinegar
- 1 tbsp (15ml) soy sauce
- 1 tbsp (15ml) sesame oil
- 1 tbsp (20g) honey (or brown sugar)
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1/2 tsp sriracha (optional for spice)
Instructions
- In a large bowl, combine green cabbage, red cabbage, chicken, carrots, almonds, green onions, sesame seeds, and chow mein noodles.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and sriracha.
- Pour the dressing over the salad and toss well to coat.
- Serve immediately or let it chill for 10-15 minutes for flavors to blend.
