Namkeen Gosht

Ingredients:

  • 1 kg Beef, cubed (lean, approx. 800g after trimming)
  • Salt, to taste (approx. 1-2 teaspoons)
  • Black pepper, ½ teaspoon
  • Beef fat/Suet, 1 cup (approx. 200g)
  • Lemon, 2-3 sliced
  • Onion, 1 sliced

Directions:

  1. In a large pot, combine all ingredients: beef, salt, black pepper, beef fat, lemon slices, and onion.
  2. Cook over low heat, covered, until the meat is tender and cooked through. This may take several hours, depending on the cut of beef. Check periodically and add a little water if necessary to prevent burning. The meat should cook in its own juices and the rendered fat.
  3. Once cooked, remove the lemon slices and onion (optional).
  4. Serve hot with extra lemon wedges and sliced onion, if desired.
