Bran Bread

Ingredients

  • 2 ½ cups (315g) whole wheat flour
  • 1 cup (60g) wheat bran
  • 1 tsp salt
  • 1 tbsp sugar or honey
  • 1 ½ tsp active dry yeast
  • 1 cup (240ml) warm water (110°F/45°C)
  • 2 tbsp olive oil or melted butter

Instructions

  1. Activate the Yeast:

    • In a small bowl, mix the warm water, sugar (or honey), and yeast. Let it sit for 5–10 minutes until frothy.
  2. Combine Dry Ingredients:

    • In a large mixing bowl, combine whole wheat flour, wheat bran, and salt.
  3. Mix Wet Ingredients:

    • Add the frothy yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.
  4. Knead the Dough:

    • Transfer the dough to a floured surface and knead for about 8–10 minutes, until smooth and elastic.
  5. Let It Rise:

    • Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for 1–1.5 hours or until doubled in size.
  6. Shape the Dough:

    • Punch the dough down and shape it into a loaf. Place it in a greased loaf pan. Cover and let it rise again for about 30–45 minutes.
  7. Bake the Bread:

    • Preheat the oven to 375°F (190°C). Bake the bread for 30–35 minutes or until the top is golden brown and it sounds hollow when tapped.
  8. Cool and Serve:

    • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
