Homemade Puff Pastry
Ingredients
- 2 ½ cups (315g) all-purpose flour
- 1 tsp salt
- 1 cup (225g) unsalted butter, chilled and cubed
- ⅔ cup (160ml) cold water
Instructions
Prepare the Dough:
- In a large bowl, mix flour and salt.
- Add the chilled butter cubes, breaking them into the flour with your hands or a pastry cutter. The mixture should resemble coarse crumbs, with some larger butter chunks visible.
- Gradually add cold water and mix until the dough just comes together. Do not overwork.
Chill the Dough:
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Roll and Fold (Laminate the Dough):
- On a lightly floured surface, roll the dough into a rectangle, approximately 10x15 inches.
- Fold the dough into thirds like a letter (bottom third up, top third down).
- Rotate the dough 90 degrees, roll it out again, and repeat the folding process.
Chill and Repeat:
- Wrap the folded dough in plastic wrap and chill for 30 minutes.
- Repeat the rolling, folding, and chilling process 3–4 more times.
Final Chill:
- After the last fold, chill the dough for at least 1 hour before using.
Use and Bake:
- Roll out the dough as needed for pastries, pies, or tarts.
- Bake at 375°F (190°C) until golden brown, time depending on your recipe.

- Keep the butter and dough cold throughout the process for flaky layers.
- Avoid overworking the dough to prevent toughness.
- Freeze leftover puff pastry for future use.
