Homemade Puff Pastry

Ingredients

  • 2 ½ cups (315g) all-purpose flour
  • 1 tsp salt
  • 1 cup (225g) unsalted butter, chilled and cubed
  • ⅔ cup (160ml) cold water

Instructions

  1. Prepare the Dough:

    • In a large bowl, mix flour and salt.
    • Add the chilled butter cubes, breaking them into the flour with your hands or a pastry cutter. The mixture should resemble coarse crumbs, with some larger butter chunks visible.
    • Gradually add cold water and mix until the dough just comes together. Do not overwork.
  2. Chill the Dough:

    • Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. Roll and Fold (Laminate the Dough):

    • On a lightly floured surface, roll the dough into a rectangle, approximately 10x15 inches.
    • Fold the dough into thirds like a letter (bottom third up, top third down).
    • Rotate the dough 90 degrees, roll it out again, and repeat the folding process.
  4. Chill and Repeat:

    • Wrap the folded dough in plastic wrap and chill for 30 minutes.
    • Repeat the rolling, folding, and chilling process 3–4 more times.
  5. Final Chill:

    • After the last fold, chill the dough for at least 1 hour before using.
  6. Use and Bake:

    • Roll out the dough as needed for pastries, pies, or tarts.
    • Bake at 375°F (190°C) until golden brown, time depending on your recipe.
