Homemade Apple Pie
Ingredients
For the Pie Crust:
- 2 ½ cups (315g) all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup (230g) unsalted butter, cold and cut into small cubes
- 6–8 tablespoons (90–120ml) ice water
For the Apple Filling:
- 6–8 medium apples (about 2 pounds), peeled, cored, and sliced (a mix of Granny Smith and Honeycrisp works well)
- ¾ cup (150g) granulated sugar
- ¼ cup (50g) light brown sugar, packed
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter, cut into small pieces
Optional Topping:
- 1 egg, beaten (for egg wash)
- 1 tablespoon sugar, for sprinkling
Instructions
1. Make the Pie Crust:
- In a large bowl, whisk together the flour, salt, and sugar.
- Add the cold butter cubes and cut them into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
- Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the Filling:
- In a large bowl, toss the sliced apples with lemon juice.
- Add the sugars, flour, cinnamon, nutmeg, salt, and vanilla extract. Stir until the apples are evenly coated.
3. Assemble the Pie:
- Preheat your oven to 400°F (200°C).
- Roll out one disc of dough on a lightly floured surface into a 12-inch circle. Transfer it to a 9-inch pie dish, pressing it gently into the edges.
- Pour the apple filling into the crust, mounding it slightly in the center. Dot the filling with butter pieces.
- Roll out the second disc of dough into a 12-inch circle. Place it over the filling and seal the edges, trimming any excess. Crimp the edges as desired.
- Cut a few slits in the top crust to allow steam to escape. Brush the crust with beaten egg and sprinkle with sugar.
4. Bake the Pie:
- Place the pie on a baking sheet to catch any drips. Bake at 400°F (200°C) for 20 minutes.
- Reduce the temperature to 375°F (190°C) and bake for an additional 35–45 minutes, or until the crust is golden brown and the filling is bubbling.
- If the edges of the crust brown too quickly, cover them with foil or a pie shield.
5. Cool and Serve:
- Let the pie cool on a wire rack for at least 2 hours before serving to allow the filling to set.
