Homemade Apple Pie

Ingredients

For the Pie Crust:

  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup (230g) unsalted butter, cold and cut into small cubes
  • 6–8 tablespoons (90–120ml) ice water

For the Apple Filling:

  • 6–8 medium apples (about 2 pounds), peeled, cored, and sliced (a mix of Granny Smith and Honeycrisp works well)
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, cut into small pieces

Optional Topping:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon sugar, for sprinkling

Instructions

1. Make the Pie Crust:

  1. In a large bowl, whisk together the flour, salt, and sugar.
  2. Add the cold butter cubes and cut them into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
  4. Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.

2. Prepare the Filling:

  1. In a large bowl, toss the sliced apples with lemon juice.
  2. Add the sugars, flour, cinnamon, nutmeg, salt, and vanilla extract. Stir until the apples are evenly coated.

3. Assemble the Pie:

  1. Preheat your oven to 400°F (200°C).
  2. Roll out one disc of dough on a lightly floured surface into a 12-inch circle. Transfer it to a 9-inch pie dish, pressing it gently into the edges.
  3. Pour the apple filling into the crust, mounding it slightly in the center. Dot the filling with butter pieces.
  4. Roll out the second disc of dough into a 12-inch circle. Place it over the filling and seal the edges, trimming any excess. Crimp the edges as desired.
  5. Cut a few slits in the top crust to allow steam to escape. Brush the crust with beaten egg and sprinkle with sugar.

4. Bake the Pie:

  1. Place the pie on a baking sheet to catch any drips. Bake at 400°F (200°C) for 20 minutes.
  2. Reduce the temperature to 375°F (190°C) and bake for an additional 35–45 minutes, or until the crust is golden brown and the filling is bubbling.
  3. If the edges of the crust brown too quickly, cover them with foil or a pie shield.

5. Cool and Serve:

  • Let the pie cool on a wire rack for at least 2 hours before serving to allow the filling to set.
