Soy-Glazed Grilled Chicken with Sautéed Veggie Medley

Grilled Chicken Ingredients:

  • 2 chicken breasts
  • 2 tbsp soy sauce
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Sautéed Vegetables Ingredients:

  • 1 cup broccoli florets
  • 1/2 cup mushrooms, sliced
  • 1/2 cup bell peppers, sliced (any color)
  • 1/2 cup shredded cabbage
  • 1/2 cup spinach leaves
  • 1/4 cup green onion, chopped
  • 1/4 cup carrots, julienned
  • 1 tbsp soy sauce
  • 1/2 tsp black pepper
  • 1/4 tsp salt (optional)
  • 1 tbsp olive oil or sesame oil

Instructions:

1. Marinate and Grill the Chicken:

  1. In a bowl, combine soy sauce, black pepper, and salt.
  2. Marinate the chicken breasts in the mixture for at least 20–30 minutes.
  3. Heat a grill pan or outdoor grill over medium heat.
  4. Grill the chicken for 5–6 minutes per side until fully cooked and golden brown.
  5. Let it rest for 2–3 minutes before slicing.

2. Sauté the Vegetables:

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add carrots, broccoli, and mushrooms. Sauté for 2 minutes.
  3. Stir in cabbage, bell peppers, and green onions. Cook for another 2–3 minutes.
  4. Add spinach last, along with soy sauce, black pepper, and salt. Stir-fry for 1 minute until spinach wilts and everything is evenly coated.

Serving Suggestion:

Plate the sliced grilled chicken alongside the sautéed vegetable medley. Garnish with a sprinkle of green onion or sesame seeds for an extra touch.
