Creamy Pasta
Serves: 4
Time: 30 minutes
Ingredients:
- 12 oz (340g) pasta (fettuccine or your choice)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth (or vegetable broth)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente, then drain and set aside, reserving 1/2 cup of pasta water.
- Make the creamy sauce: In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add the cream and broth: Stir in heavy cream and chicken broth. Bring to a simmer and cook for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
- Combine the pasta and sauce: Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Finish with Parmesan: Stir in the Parmesan cheese, season with salt and pepper to taste, and cook for another 1-2 minutes.
- Garnish and serve: Top with freshly chopped parsley and extra Parmesan, if desired. Serve immediately!
- You can use broccoli and green onions.
