Penne Pasta with Creamy Spinach & Sausage
Ingredients:
- 12 oz (340g) penne pasta
- 1 lb (450g) sausage
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup (240ml) heavy cream
- ½ cup (120ml) chicken broth
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- 2 cups (60g) fresh spinach, chopped
- ½ cup (50g) grated Parmesan cheese
- Salt & black pepper, to taste
Instructions:
1️⃣ Cook the Pasta
- Bring a large pot of salted water to a boil. Cook penne pasta until al dente. Drain and set aside.
2️⃣ Cook the Sausage
- In a large pan, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.
3️⃣ Make the Creamy Sauce
- Add minced garlic and chopped onion to the pan. Sauté until fragrant (about 2 minutes).
- Pour in heavy cream and chicken broth. Stir in Italian seasoning and red pepper flakes. Simmer for 3-4 minutes.
4️⃣ Add Spinach & Cheese
- Stir in chopped spinach and let it wilt.
- Add Parmesan cheese and stir until melted into the sauce.
5️⃣ Combine & Serve
- Add the cooked penne pasta to the pan and toss until well coated.
- Adjust seasoning with salt and black pepper.
- Serve hot with extra Parmesan and fresh basil (optional).
