Penne Pasta with Creamy Spinach & Sausage

 Ingredients:

  • 12 oz (340g) penne pasta
  • 1 lb (450g) sausage
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup (240ml) heavy cream
  • ½ cup (120ml) chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 2 cups (60g) fresh spinach, chopped
  • ½ cup (50g) grated Parmesan cheese
  • Salt & black pepper, to taste

Instructions:

1️⃣ Cook the Pasta

  1. Bring a large pot of salted water to a boil. Cook penne pasta until al dente. Drain and set aside.

2️⃣ Cook the Sausage

  1. In a large pan, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove excess grease if needed.

3️⃣ Make the Creamy Sauce

  1. Add minced garlic and chopped onion to the pan. Sauté until fragrant (about 2 minutes).
  2. Pour in heavy cream and chicken broth. Stir in Italian seasoning and red pepper flakes. Simmer for 3-4 minutes.

4️⃣ Add Spinach & Cheese

  1. Stir in chopped spinach and let it wilt.
  2. Add Parmesan cheese and stir until melted into the sauce.

5️⃣ Combine & Serve

  1. Add the cooked penne pasta to the pan and toss until well coated.
  2. Adjust seasoning with salt and black pepper.
  3. Serve hot with extra Parmesan and fresh basil (optional).
